The meat and fat of the pigs are finely ground until it forms a paste, to which other ingredients are added, as is salt and a ground pickling which has already been prepared. The packing is done by hand and consists of wrapping the mix in pork fat (sugna) skin ( the covering that wraps a part of the pig fat) previously put to stand in a solution of water, dry white wine. The product thus obtained is tied with twine and put to dry for a period varying from 1 to 3 days, after being packaged the product can be put on the market.
